Chocolate Sandwich
6 oz(170g) butter
6 ozs sugar
3 eggs, seperated
3 ozs,85g drinking chocolate powder, not cocoa
4 fl ozs 100 ml milk
200 g flour
½ teasp. baking powder
Butter filling+
45 g butter
85g icing sugar
¼ tsp vanilla essence
Chocolate Glace Icing
55g, ½ cup drinking chocolate powder not cocoa
2 Tablesp. cold water
15g butter
¼ tsp. vanilla essence
225 g 2 cups icing sugar
hot water
or
dark Icing
170 g icing sugar
55 g, ½ cup cocoa
85 g butter
6 Tables. water
110g, ½ cuo caster sugar
Preheat oven 190 °C
cream butter add sugar, add egg yolk
blend chocolate powder with milk add, flour baking powder stiffly
beaten egg white. Bake in oven for 30 min.
Cream butter add sugar and beat until soft and creamy. Add vanilla.
CGI (chocolate glace icing)
Put chocolate powder with cold water into saucepan. add butter vanilla and stirr over gentle heat until chocolate is dissolved. Put icing sugar into a bowl, add the dissolved choc and sufficient hot water to mix that will coat the back of a wooden spoon. Beat until smooth and glossy.
DCI (dark chocolate icing)
Sieve the icing sugar and cocoa into a bowl. Put sugar, butter,
waterinto a saucepan. Set over low heat and stir until sugar has
dissolved . Bring just to the boil and pour into the sifted
ingredients. Beat untol smooth….It will thicken as it cools.
Split cold cake spread with butter filling and sandwich together Ice.
